Quick and Easy Paleo Strawberry Scones

I don't know about you, but I'm into fast, delicious recipes for summer. Especially breakfast. Mornings are always busy around our house as we get up early to feed horses, work in the gardens, mow, or accomplish whatever needs done outside before the sun is scorching hot.

I am always looking to try new breakfast ideas, but most of what I find either takes too long to prep or is complicated enough that I don't try them.

But, good news for all of us! I made these delicious strawberry scones yesterday and they took 10 minutes to whip up and 30 minutes to bake. Bam! Now that's my kind of recipe.

Ingredients:

  • 1 1/2 cups almond flour (you can buy in bulk through this link)
  • 1/4 cup arrowroot flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup avocado oil (or coconut oil)
  • 3 Tablespoons maple syrup
  • 1 egg (or egg replacer)
  • 1 cup strawberries

Method:

Preheat oven to 350 degrees.

Wash and cut up strawberries. I still didn't have enough to use from the garden...my boys keep eating them all!

Once you have them cut into pieces, set them aside until the very end.

Incorporate all dry ingredients in a bowl; almond flour, arrowroot flour, baking powder and salt.

In a smaller bowl, incorporate all wet ingredients; oil, maple syrup and egg or egg replacer. Whisk together.

Pour the wet ingredients over the dry ingredients and stir to incorporate.

Throw the strawberries in the bowl and stir them in.

*Note* The batter will be thicker in consistency, almost like cake.

Grab a pie dish and put a piece of parchment paper in to line the bottom and sides of the dish. Pour the batter into the prepared dish and bake!

One thing I have learned about baking paleo is that you want to make sure to cook your pastry long enough. If not, the bottom or the middle tends to be gooey. I baked mine for 30 minutes and it was done!

Let rest for 10 minutes to cool, then slice and enjoy!

These scones make for the perfect summer breakfast on the go! They are soft on the inside, crispy on the outside and most importantly, delicious! They pair perfectly with a cup of coffee.
