Beef and Tortellini Soup
Fall is one of my favorite times of the year for soup. For one, I love to throw everything together in my crock pot so dinner is done whenever we get in for the evening. And these cool fall evenings have me craving something warm.
I remember having Beef and Tortellini Soup when I was growing up. My mom used to make it once in a while and it was one of my favorites! To be honest, I'm not even sure where this recipe came from, but I found it the other day in my recipe box, written out in my mom's handwriting and just had to make some!
Ingredients
1 pound hamburger
28 ounce jar diced or crushed tomatoes
1 10 oz can french onion soup
1 9 oz package frozen green beans (or roughly 3 cups fresh)
1 16 oz package of tortellini (or dairy free noodle)
1 teaspoon basil
1 medium zuccini
Method
In a 5 quart dutch oven cook beef until well browned. I like to add salt, garlic salt, onion and cumin to my ground beef. Once the ground beef is cooked through, drain fat off.
Add the tomatoes, french onion soup, tortellini (or other dairy free noodle), green beans, basil and 3 1/2 cups of water to the dutch oven. Bring to a boil. Reduce heat to medium, cover and cook 10 minutes.
Add the diced zucchini and cook uncovered 10 more minutes or until the veggies and pasta are tender.
Serve and enjoy!
Method #2
Boil water on the stove and add in your pasta of choice, tortellini or dairy free noodles. Cook half-way through. Drain and add to crock pot.
While noodles cook, brown beef in a skillet until well cooked. Add the seasonings above or the ones of your choice! Once the ground beef is cooked through drain off the extra fat. Add to your crockpot.
Then add tomatoes, french onion soup, green beans, basil, diced zucchini and 3 1/2 cups water or beef broth to the crock pot.
Cook on low for 4-6 hours.
This is a simple soup, easy to make and delicious to eat!
